Pochle – old Scots – meaning to have an amount of something without exactly having permission.
Pochle is a zero-waste initiative that relies on the generosity and community spirit that apple trees so wonderfully cultivate at harvest time. Collaborating with the talent of local students we have created one of Scotland’s most sustainable spirits, Pochle Geal.
Pochle Geal is a Scottish apple eau de vie or fruit spirit and is the product of two years of research and development.
If you can think of whisky as a distilled beer, then think of Pochle as a distilled cider – fermenting then distilling the fruit to create a clear spirit that derives its flavours from just three ingredients: apples, yeast and water.
We have laid some spirit to rest in a mixture of oak casks, including bourbon casks, bespoke Pedro Ximenez ¼ casks and virgin American oak firkins and once aged Pochle Geal will have become a brandy. A cider brandy.
